Jealous Again

I just added a slew of fall dates to the calendar page on LAW.com. Most of the dates are out west, and now I'm totally jealous because who wouldn't want to spend September and October in California, Idaho, Oregon and Washington? Some girls have all the luck.

I'm on a massive Wilco kick this afternoon (if you like toe tappin', old school sounding country music, check out their track I Thought I Held You). What's gracing your iTunes today?

I was looking through my computer and found this. Courtney posted it on the LAW website a long while bac k:

Cream Cheese Pound Cake
Ingredients:
1 box butter cake mix
1/2 cup warm water
1/2 cup oil
1/2 cup sugar
4 eggs
1 (8-ounce) package cream cheese
2 tablespoons oleo or butter

Mix cake mix with water and sugar. Add oil and eggs. Add softened cream cheese and oleo (or butter). Mix well. Bake in angel food cake pan or 2 loaf pans at 350 degrees for about 35-40 minutes or until done.

Not to deviate away from the subject, but I found another one:

Cinnamon Coffee Cake

1/2 cup packed brown sugar
1/2 cup chopped nuts
2 tablespoons flour
2 teaspoons ground cinnamon
2 tablespoons oil
1 1/2 cups flour
1/2 cup granulated sugar
2 1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg white
1/4 cup oil
3/4 cup skimmed milk (whole works fine)

Heat oven to 375. Grease 9 x 9 pan. Mix brown sugar, 2 tablespoons flour, cinnamon, and 2 tablespoons oil; reserve.
Mix 1 1/2 cup flour, granulated sugar, baking powder and salt. Stir in egg whites, 1/4 cup oil and milk until flour is moistened. Spread half of batter in pan; sprinkle with 1/2 cinnamon mixture. Repeat. Bake until toothpick comes out clean - 30 - 45 minutes.

One other...

Sweet Potato Casserole

2 cans of sweet potatoes (30 oz.)
1/2 stick of butter (melted)
2 cups sugar
1 1/2 cups milk
4 eggs beaten
1 teaspoon cinnamon (Lee Ann adds more)

For topping:
1 cup brown sugar
1 1/4 melted butter
2 cups chopped pecans

Cook potatoes 10 -15 minutes in juice. Drain. Mix rest of ingredients. Pour into buttered dish. Bake 350 for 35 minutes.
For topping, melt butter, add rest of ingredients. Pour on top of casserole. Bake at 350 for 20 minutes.
